Our process: from legume to protein powder

In legumes, starch particles are larger than protein particles. This difference helps us in separation. Our goal is to split the two components and maximize the percentage of protein in the resulting product.

The process of protein selection and dry concentration consists of efficient fine grinding with the “PPS” classifier mill obtaining a product <40÷50µm and subsequent high-performance classification of this finely ground product with the “MS” classifier. This process allows obtaining two products: a fine product (protein concentrate) and a coarse product (starch concentrate). Subsequent classification allows obtaining the two main fractions of concentrate 8÷10µm and about 10÷50µm for the starch fraction. The protein concentrate reaches percentages of 25÷30% depending on the processed legume.

The technique developed by CIMMA avoids overheating and allows preserving flavors, active ingredients, physical structure and nutritional value of the raw material.

Safety first: ATEX-certified installations

During processing, the powder can create explosive atmospheres. Therefore, all of our equipment for this application is ATEX certified.

This means:

  • Isolated and safe areas.
  • Inerting, suppression, and venting systems.
  • Continuous monitoring of internal and external areas of the plant
  • Risk analysis and comprehensive safety documentation.
